Chicken Inasal is a trademark food of the City of Smiles and is considered one of their special cuisines. This dish originated from Bacolod City, which says that you can't spell the city's name without the word Inasal in it.
The word Inasal, on the other hand, is from the Hiligaynon term meaning "char-grilled" or "roasted meat." This cuisine is so famous in the region that they even have a street in Bacolod City named "Manukan Country." It is called such a name since all men used to have Inasal as their star dish.
The food and the place are an impeccable match that Bacolod is listed as one of the most livable cities in the Philippines.
You can also enjoy other finger-licking dishes in Bacolod City, like their KBL or the Kadyos, Baboy, and Langka, which are named after the three main ingredients of the cuisine itself.

Bacolod’s Chicken Inasal

Ingredients:
- Chicken
- Lemongrass and ginger
- Coconut vinegar
- Soy sauce
- Calamansi juice
- Garlic
- Brown sugar
For basting sauce:
- Annatto or atsuete seed
- Butter or margarine
- Salt and pepper
Marinating the chicken:
- Mix the garlic, ginger, lemongrass, sugar, calamansi juice, vinegar, and soy sauce in a bowl.
- Add salt and pepper to taste, and then add the chicken. Mix the chicken well with the marinated sauce.
- After mixing, put the marinated chicken in the chiller and let it sit for an hour or two.
To prepare the basting sauce:
- Heat the pan, then put the butter.
- Let the butter melt, then add the annatto seeds, garlic for additional aroma, and oil. Mix them well until the color of the annatto seeds is infused with the other ingredients.
- Put the heat to low fire, then let it boil. You can also add some salt and pepper for extra flavor.
How to cook:
- Slightly cut the chicken before grilling. Put slits so that the chicken will not be bloody when cooked.
- Grill the chicken.
- While grilling, don't forget to baste the chicken with the basting sauce that you made earlier. Make sure to baste it once in a while to permeate the mixture's flavor in the chicken.
