How to Cook Sinuglaw by Kusina ni Juan

It is also famous for its sumptuous local dishes. One of them is Humba which is the sweet version of Adobo. It is considered a star casserole in every local feast and party in the city. Another famous local dish is the Halang-Halang, or spicy chicken. It means spicy-spicy in English. Want to try this local dish? Make sure that you have some amount of courage to taste this because of its double spiciness flavor. Meanwhile, if you are adventurous enough, they also have the Sampayna, the Visayan version of Tagalog's local dinuguan.
After trying out their delicious and sizzling local dishes, guests and tourists in Ozamiz City might also want their local desserts and treats. For starters, they have Suman or rice cakes with different flavors. You can choose from their ube suman, suman with langka, mango-flavored suman, and many more! They also have Puto Maya or rice cakes that give you a different texture from the famous local Filipino puto. Aside from the usual suman, they also have Sweet Moron for people with a sweet tooth.

Sinuglaw comes from the words Sinugba meaning grilled, and Kinilaw which means soaked in vinegar. A fusion for both of these mouthwatering local dishes from Ozamiz will give you Sinuglaw.

Ingredients of Sinuglaw
- Pork
- Fresh Tuna
- Cucumber
- Soy sauce
- Vinegar
- Red onion
- Ginger
- Calamansi
- Chili
- Salt
- Ground black pepper
How to cook Sinuglaw:
- Marinate the pork before grilling. Mix the soy sauce, vinegar, calamansi, garlic, and ground pepper for the marinade in a bowl.
- Massage the pork with the marinated sauce then, set aside.
- In a bowl, mix the sliced tuna fish with ½ cup of vinegar. Let it soak for 8 minutes for our Kinilaw.
- It's now time to grill the pork. Make sure that the griller is hot before grilling the pork.
- While waiting for the pork to be grilled, prepare the Kinilaw by pressing the tuna lightly using a fork.
- Drain the vinegar or remove the tuna from the bowl. Tip: The sourer your Kinilaw is, the tastier it becomes. After draining the fish, it's now time to mix the remaining ingredients. Mix the cucumber, onion, ginger, chili, salt, and calamansi juice in a separate bowl.
- Mix the ingredients well before adding the marinated tuna.
- Add more vinegar and ginger to your Kinilaw. For a more palatable kinilaw, make sure to put a generous amount of ginger.
- After grilling the pork, slice it into smaller pieces. The juicier your pork is, the much better match it will be for your Linilaw.
- Put your Sinugba or grilled pork in your Kinilaw. Mix them well.
- You can now transfer your Sinuglaw to a serving plate.
